In the first phase, they allowed 25 liters of beer in one bag, but due to current legislation, I cannot exceed two thousand liters per year.

Dean of the Faculty of Philosophy, Jan Stejskal, wrote for this project to free up the unused cellars in the buildings on Svobody Street, which, thanks to the stable temperature and humidity, offer ideal conditions for the production of grains and grains of golden liquid.

The second will be the establishment of beer production at the Faculty of Science, where new subjects such as beer chemistry and exercises in beer chemistry have been introduced at the department of analytical chemistry.

They will be replaced by the study of all the chemical processes that take place when beer and its grains are brewed in wooden barrels, said Luk Kuera from the Department of Analytical Chemistry of the Faculty of Production at Palacky University.

Students will investigate, for example, the role of bacteria in the fermentation of juice and develop new methods of analysis of components used in the production of a popular drink.

According to the teacher, the connection of the experimental microbrewery with the Faculty of Education also has great potential.

Its current curriculum can be enriched, for example, with the subject of exchange on the issue of fermentation, which is a very important process from the point of view of food storage. It can be used, for example, in the context of crisis measures and for long-term food protection, Kuera specified.

Involve all faculties

He added that he wants to gradually involve all faculties in the project. According to him, the beer phenomenon can be examined from many points of view.

And this is about the history of brewed beer, the development of recipes and beer culture over time, geographical differences in the progress of brews, the use of modern technologies and the health aspect, he added.

The students of the Láksk Faculty, who will, for example, research the health benefits of alcohol that contains beer, will contribute to the project.

One can, for example, study the effect of its regular consumption on the human intestinal microbiome, which is said to be a kind of brain. The positive effect of regular beer drinking on the cardiovascular system is so interesting, thanks to the presence of oils from hops, explained Kuera.

There is a brewery in the premises of the Department of Analytical Chemistry of the Faculty of Science, and the first batch should be ready by the end of August. Then the work goes to the basement of the Faculty of Philosophy.
