St. Martin’s weekend is just around the corner, and Olomouc’s restaurants are properly prepared for it. Guests will be offered both a classic in the form of roast goose with cabbage and dumplings, as well as a modern take on this dish in many different variations. There will also be goose pâtés, liver, minced meat or rillettes and delicious desserts as a sweet spot at the end of the festive menu. And how much will Olomouc residents pay for these specialties?

Guests of the U Kristýna restaurant in Wurmová Street will be able to enjoy golden roast goose from noon on Friday, for example. The chefs there will prepare kaldoun with meat dumplings, fried goose liver on toasted white bread and goose in three different ways.
“Of course, we will offer the classics in the form of slow-roasted goose with red and white cabbage and bun and bacon dumplings. I recommend trying our confit goose leg with vegetable ratatouille, honey chestnuts and potato wedges. It’s a different concept of Saint Martin’s Goose and it’s definitely worth tasting,” says Jana Navrátilová, the company’s operations manager.

As a sweet spot, guests can enjoy a pear strudel with vanilla sauce and whipped cream with a cup of coffee. Those interested are already booking dates, it is mainly occupied for Saturday lunchtime and early afternoon, there are still free places at U Kristýna for Friday and Saturday evenings.
Goose by the water
Those who book a menu at Poděbrady in Olomouc will also enjoy the goose feast on the weekend. The restaurant there will offer guests a complete St. Martin’s menu. This includes a fried croquette with shredded goose meat and a cream soup with dumplings and liver.
“We have two main courses to choose from. The first of them is St. Martin’s leg with a variation of cabbage, homemade dumplings and Vienna onion. Or you can order smoked duck breast with wasabi, espuma, potato fried in lard and fermented cabbage,” listed chef Dominik Jedlička.

Dessert will be in the form of a sponge cake dipped in spiced caramel with nuts and lemon mascarpone. Reservations are possible for Friday at 5 p.m., Saturday at 11 a.m., 2 p.m. and 6 p.m., and Sunday at 11 a.m. and 2 p.m. “The price for the menu without wine pairing is 690 crowns, with wine pairing 850 crowns,” specified Dominik Jedlička.
Pate and blueberry dumplings
Goose specialties are served as part of the evening menu throughout this week at the Plán B restaurant on Palachov náměstí in Olomouc. As an appetizer, you can order duck pâté with roasted almonds and cranberries or goose rillettes with herbs and pickled onions.
The soup is a traditional goose stew with noodles and vegetables. As for the main course, there is a choice of confit goose leg with white cabbage and bacon dumpling or with red cabbage and lox. The sweet spot is blueberry dumplings, creme fraiche, vanilla and chocolate.

There will also be a feast in the Hanácká pub on Dolní náměstí. They serve goose liver pâté wrapped in crushed almonds with glazed fig and toasted baguette, goose kaldoun with vegetables and homemade noodles or sautéed liver with pancetta, shallots and marjoram, plum chutney and potato lox.
As a main course, the menu includes confit goose leg with chestnut stuffing, red cabbage with cranberries, white cabbage with apples and a variety of dumplings. Dessert is an upside-down pear cake with vanilla ice cream and whiskey sauce. The parties there take place from Thursday to Sunday.
