The ČSN standard from 1976 clearly stipulated what raw materials could be used and in what proportion. That’s why the salad tasted the same in Ostrava and Pilsen. At the same time, many delicatessens produced it themselves or collaborated with a specialized production company.

No preservatives, thickeners or dyes were added to it, which can be found in today’s salads, placed in cooling boxes.

The secret of composition

If you look at the box sold in regular retail chains, words like sodium nitrite, potato starch, carrageenan, di and tri phosphates, xanthan, carubin, guar gum, potassium sorbate and sodium benzoate will jump out at you.

A salad that looks fresh at first glance would probably survive until the next winter if not opened.

So if you feel like a delicacy, but prefer food without labels, make it at home according to the standard of the time.

She ordered that the salad should contain 420 g of ham salami, 200 g of sweet and sour pickles, 300 g of mayonnaise, 55 g of sterilized peas, 6 g of vinegar, 10 g of sugar, 0.5 g of pepper, 8 g of Worcestershire, 5 g of salt, 20 g of mustard and 30 g of onion. The resulting product should be more liquid than vlasak and should taste strongly like mayonnaise and salami.

Therefore, make sure that these ingredients are of the highest quality. Again, the less added substances, the better. Mayonnaise should primarily contain egg yolks, oil, water, sugar, vinegar and salt.

For ham salami, prefer the highest possible proportion of meat, or replace it with ham, which is made from whole muscle and must contain at least 16% muscle protein.

Once you’ve bought the ingredients, cut the ingredients into strips, rinse the onion with boiling water and put everything in a large bowl so that the salad can be mixed properly and the flavors can be thoroughly combined.
