Nowadays, when more and more emphasis is placed on sustainability and waste minimization, Czech supermarket chains are trying to find effective ways to reduce the amount of unsold baked goods. Chains thus use different strategies to prevent food waste.

According to Jiří Mareček, director of communications at Albert stores, it is waste by food in the chain minimized to just a percentage. “In 2022, we have reduced this share to 1.04%,” stated for Kupi.cz.

“Albert focuses on donating unsold baked goods to food banks and in the event that the bread is no longer suitable for human consumption, it provides it to animals farms and rescue stations. We also work with customers to reduce food surpluses. Tomáš Kubík, Penny’s communications manager, emphasizes that their strategy consists in adapting the pastry menu during the day.

“No food that doesn’t sell, we don’t throw away. We manage the selection of baked goods throughout the day so that there is as little left over as possible. In order to avoid waste, customers just before closing time will not have as wide a selection as, for example, in the morning. We offer baked goods that are not sold, among other things within Uneaten packages. We will also start offering hard rolls on breadcrumbs.” says Kubík. In this way, Penny not only reduces waste, but also offers cost-effective options to customers.

Lidl gives discounts on pastries before closing time

Eliška Froschová Stehlíková, press spokesperson for Lidl, explains that Lidl is trying optimize baking the pastry so so that surpluses do not arise.

“When, after all, unpackaged baked goods remain in the store even after closing time, as part of our project We save on food with Lidl we will offer it to customers 70% off. Placed in the same rack as the familiar fruit and vegetable bags, the bags contain several pieces of the same type of unwrapped pastry and customers will be able to buy them until noon the following day. The same applies to unpackaged bread from the previous day. Pastries that no longer meet quality and freshness requirements are then passed on for further use to biogas stations Stehlíková reports.

Own production minimizes waste in Globus

Aneta Turnovská, press spokesperson for Globus, points out that own production enables the chain adapt production to current demand.

“In some cases, our system allows us to eliminate a large amount of goods that could succumb to expiration. Each of the Globus hypermarkets has own bakery, butcher and gastro production. By producing our own food from raw materials and being able to adapt production plans from day to day and hour to hour, we have minimal residues foods, which also applies to baked goods,” explains Turnovská.

Kaufland cooperates with food banks
