Today’s diners don’t have it easy. The pastry must be fresh, crispy, ideally still warm. After only a few hours of hardening, it is “inedible” for them. They look for perfectly symmetrical shapes in fruits and vegetables. They also have a difficult time with dairy and meat products: the use-by date is a red exclamation mark that must not be approached even for a few days.
In a restaurant or dining room, it is very difficult to arrange all the courses when there is still room for dessert. And reheat leftovers from a cooked lunch for dinner or the next day? Not at all. Throw everything in the trash.
The Spanish (30 kg of wasted food per person per year) and the Slovenians (36 kg) manage the best, while the Portuguese (124 kg), the Italians (107 kg) and the Maltese (92 kg) are the worst.
