Not only the Prague underground is celebrating fifty years, but also the sweet metro

It was designed and manufactured by the state-owned enterprise Prague Bakeries and Mills for an unusual event. The dessert, whose four pieces in one package symbolized the four carriages in one set that ran in the metro at the time, gained such popularity that it is still produced in an almost unchanged form in Michelské pékárny.

A long-lasting confectionary product consists of a sponge cake with fat cream covered with fondant and covered with cocoa glaze.

Production line from the Netherlands

The production was preceded by the purchase of a new production line from the Netherlands, which was purchased by the then General Directorate of Prague Bakeries and Mills.

“At that time, two production lines were brought to Czechoslovakia. The smaller one was placed in Michle, the larger one in Slovakia. However, it stopped being used very quickly, because the production in Michli took off very well. That’s why it was decided that the larger line will move to Michle and the smaller one will be sold abroad,” technical director Karel Paulů recalled about the start of production.

Nowadays, Metro dezert is exported to Slovakia, so the product continues to appear on the market there.

The first trial versions were created in the Research Institute of the General Directorate according to the original Dutch recipe. The aim was to develop a confectionary product with an extended shelf life using local ingredients.

“During production tests, someone thought that the product actually looked a bit like a wagon. And because at that time everyone was living a significant event, such as the planned opening of the first metro line in Prague, in honor of this festive event they also named the newly developed product as Metro dessert,” explained the connection between the delicacy and the means of transport, Radka Slezáková, sales director of Michelské pékáren.

After the start of production in the new bakery in Michli, where the production line was moved, regular production of the packaged confectionery product began.

Supplies for Spartakiad practitioners

According to Slezáková, it began to enjoy considerable popularity thanks to its properties, especially the extended shelf life with the possibility of storage at normal temperatures, i.e. outside the refrigerator.

“It has become a popular snack for many cultural and sporting events. The supplies for Spartakiad trainees were legendary, i.e. the provision of refreshments for several thousand athletes participating in mass performances also at the Strahov Stadium,” he recalls.

Very soon, other variants began to be added to the basic taste of the Metro dessert. “As a special limited edition to celebrate the fiftieth anniversary of the start of production, we have prepared a Metro dessert with a banana flavor,” added Slezáková.
