The Bojmany slaughterhouse near Čáslav was founded by my parents in 1996, I joined later. We have around 200 poultry on the farm, and in the fall we also raise geese for St. Martin’s celebrations. The meat we sell comes either from local sources or directly from our farm. Since we have an officially approved slaughterhouse as part of our business, we process it completely ourselves, by not only portioning the meat, but also further processing it.
We emphasize quality and individuality, so our products have an unmistakable taste and aroma. We offer chicken and duck rolls, pies, salami, ham, we also have chicken meat. We try to have a large proportion of meat in the semi-finished products, for rolls it is up to 93 percent. Our customers liked, for example, our chicken roulade with leafy spinach or broccoli. In 2012, we won the title of Regional Food for our duck roulade.
We have been at Jiřák every Friday for 12 years. In addition, we also sell at the markets in Dejvice and have a brick-and-mortar store in Čáslav.
A tip for you
When buying a chicken, it pays to take it whole. What you don’t use is suitable for stock, which has an abundance of uses in the kitchen. Do not debone the chicken thighs, it is the meat with the bone that gives the sauces the right flavor. And I recommend that you look for a recipe for a good marinade, one that warms up is useful in the winter. You prepare it from turmeric, ginger, garlic and lemon juice.
