Healthy meat from the Forests of the Czech Republic will be more available

Děčínsko – Cuckold in his own juice, Litvínovský wild boar or perhaps Zvěrináček. Lesy České republiky is preparing these and other venison products for customers. And that’s thanks to the game processing and meat production center that the state enterprise built in the Ore Mountains, specifically in the village of Klíny.

“Game is a healthy and ecological food. We have been offering it for many years, but until now it was usually in the form of a whole piece of game in the skin, which ultimately discouraged a large part of interested parties. Now, for the first time ever in the history of Forests of the Czech Republic, things are changing and we are coming with cut-up game, divided by muscle parts and finished products,” says the general director of Forests of the Czech Republic, Dalibor Šafařík.

The construction of the center started in May 2023, it was completed in October 2023, while trial operation is planned until the end of May. After the veterinary audit, sales to the retail network will begin. The total cost of construction is 15 million crowns.

Six species of game will be processed – European red deer /34 percent/, wild boar /28 percent/, red deer /21 percent/, sika deer /seven percent/, European fallow deer /five percent/ and European mouflon /five percent/. This year it should be 70 tons of processed game, from next year 100 tons, which is the optimal capacity with the current number of employees.

All game offered will be from the management hunting of Forests of the Czech Republic under the Regional Directorate of Northern Bohemia and the local forest administrations.

“We are planning about thirty types of products. The offer will depend on the hunting season and the time of year – some products will be available for the grilling season and some only for Christmas or Easter. An example could be a safari on the grill or a wine sausage,” explained Vilém Růžička, deputy regional directorate.

The basis for production are old and proven recipes without the use of dyes, a large amount of preservatives and without flour. All products are gluten-free. A substantial part of the products will go to the wholesale network, for example to hotels, restaurants, soup kitchens and hospitals. Retail sales are planned mainly in the North Bohemian region, in Hradec Králové and Prague.

The website www.masozlesa.cz will be available to those interested in venison from the Ore Mountains, and we will launch the e-shop on September 1. The gradual creation of collection points is expected, especially in the larger cities of the North and Central Bohemia regions.
